Chicken and Eggplant in Green Sauce

Easy delicious weeknight meal, ready in just 25 minutes

  • 1 ½ lbs boneless chicken – breasts or thighs – cut into 2" cubes
  • 2 tbsp cooking oil
  • 2 -3 medium size Chinese eggplants cut into 1" chunks
  • 1 16oz jar CK FRESH CORIANDER AND COCONUT SAUCE

Heat oil in large sauté pan; add chicken cubes and sauté until no longer pink, about 8 minutes. Add the eggplant and sauté for 2 minutes. Add FRESH CORIANDER AND COCONUT SAUCE and bring to a boil. Reduce heat and simmer, covered on low heat for 15 minutes until eggplants are soft. Serve over rice.

 

Shrimp in CK Coriander Coconut Sauce

Delightfully simple showcase for shrimp

  • 1 ½ lbs cleaned and peeled shrimp
  • 2 tbsp lemongrass, stems only chopped and coarsely ground with a a mortar
  • ½ cup chopped cilantro
  • 1 16oz jar CK FRESH CORIANDER AND COCONUT SAUCE
  • 1 cup water

Bring 16 oz of FRESH CORIANDER AND COCONUT SAUCE and 2 cups of water to a boil in a large saucepan.  Add lemongrass. Add the shrimp and simmer until the shrimp are cooked though, about 5 minutes.  Sprinkle with fresh cilantro. Serve over rice.

Vegetable Ratatouille Indian Style

Vegan, one meal dish

  • 2 cups cauliflower florets cut into medium sized pieces
  • 2 cups string beans cut into 2" pieces
  • 2 cups pumpkin cut into 1" chunks
  • 1 cup eggplant cut into 1" chunks
  • 1 large potato cut into 1" chunks
  • 1 medium sized tomato, chopped
  • 1 cup shelled fresh ir frozen peas
  • 2 tbsp cooking oil
  • 1 16oz jar CK FRESH CORIANDER AND COCONUT SAUCE

Heat oil in a wok. Add the pumpkin and potatoes and acute for a few minutes. Add eggplant, green beans and tomatoes and sauce another few minutes. add the cauliflower. Stir well. Add FRESH CORIANDER AND COCONUT SAUCE and bring to a boil., turn down heat to medium low and simmer covered till most of the sauce is absorbed and vegetables are soft. Add a little water if it looks too dry. When lost done, add peas and cover and turn off heat. Serve as a side or with rice. 

 

Mussels in Coconut Broth

Rustic hearty dish

  • 3 lbs cleaned mussels
  • ½ cup chopped cilantro
  • 1 16oz jar CK FRESH CORIANDER AND COCONUT SAUCE
  • 2 cups of water

Bring 16 oz of FRESH CORIANDER AND COCONUT SAUCE and 2 cups of water to a boil in a large saucepan.  Add lemongrass. Add the shrimp and simmer until the shrimp are cooked though, about 5 minutes.  Sprinkle with fresh cilantro. Serve  with a crusty baguette.
