Chicken Tikka Masala

Classic Indian chicken dish easy to prepare right at home

  • 1 ½ lbs boneless skinless chicken thighs or breasts
  • 1 medium onion diced
  • 2 tbsp CK TANDOORI SEASONING
  • 6 oz Greek yogurt
  • 1 jar CK MAKHANI SIMMER SAUCE
  • 1 cup water
  • 2 tbsp heavy cream

Marinate in the chicken in the CK TANDOORI SEASONING and Greek yogurt (2hours to overnight). Grill chicken or roast at 450 degrees for 20 minutes. Let cool and cut into bite size pieces. On the stovetop bring CK MAKHANI SAUCE and 1 cup of water to a simmer. Add cooked chicken pieces and simmer over medium heat for 7 minutes. Stir in the 2 tbsp of heavy cream and remove from the heat. Serve with basmati rice or naan. Enjoy!

 

Paneer or Tofu Makhani with Peas

A lovely vegetarian meal, serve over rice or with bread for dipping

  • 1 lb Tofu or Paneer (Indian cheese) cut in ½” cubes
  • 1 medium onion diced
  • 1 tbsp cooking oil
  • 1 cup fresh or frozen peas
  • 1 jar CK MAKHANI TIKKA SIMMER SAUCE
  • 1 cuo water
  • 2 tbsp heavy cream/Greek yogurt/coconut cream (optional)
  • 2 tbsp chopped fresh cilantro

Heat oil in medium saucepan, add onions and sauté until transparent, about 7 minutes.  Add CK MAKHANI TIKKA SIMMER SAUCE and water and  bring to a simmer. Add the tofu or paneer and peas and simmer for an additional 5 minutes over medium heat. Add the heavy cream/yogurt/coconut cream and stir to combine. Remove pan from heat. Sprinkle with the fresh cilantro.

Tempeh Bok Choy

Vegetarian

  • 1 lb tempeh cut into 1/2" cubes
  • 1 bunch boo choy, washed and chopped into 1" pieces
  • 1 jar CK MAKHANI TIKKA SIMMER SAUCE
  • Oil for frying tempeh

In a shallow frying pan or cast iron skillet, with oil about 1/2", fry the tempeh cubes till lightly browned. Set aside. 

Empty all but 2tbsp oil from pan. Over medium heat, add bok choy and saute for a few minutes. Add tempeh and saute another few minutes. Add CK MAKHANI TIKKA SIMMER SAUCE and simmer for 5 min. Serve as a side.

Chicken with Spinach - Palak Chicken

A favorite at Indian homes, packed with nutrients

  • 2 tbsp vegetable oil
  • 1 medium onion
  • 1 1/2 lbs chicken breast cut into bite sized pieces
  • 4 cups tightly packed fresh spinach
  • 2 tbsp heavy cream/ Greek yogurt/ coconut cream
  • 1 jar CK MAKHANI TIKKA SIMMER SAUCE

Heat oil on medium heat. Add onions and fry for a few minutes till translucent. Add chicken and saute lightly till no longer pink.  Add CK MAKHANI TIKKA SIMMER SAUCE and  1/2 cup of water. Bring to a boil and then turn down to heat to a medium simmer and cook for about 10 minutes. add the spinach leaves and cook for another 2-3 minutes, until wilted. Stir in cream/yogurt/coconut cream. Serve over rice or grains.
