Recipes : Parsi Cashew Ginger Simmer Sauce

Parsi Cashew Chicken Curry

  • 1 ½ lbs chicken breasts or boneless skinless thighs chopped into bite size pieces
  • 2 medium potatoes cut into 1" chunk
  • 2 tbsp oil
  • 1 jar CK PARSI CASHEW GINGER SIMMER SAUCE
  • 1/2 cup water

In a wok or a large saute pan, heat the oil and saute the chicken lightly till no longer translucent. Add the potatoes and saute for another few minutes. Add the jar of CK PARSI CASHEW GINGER SIMMER SAUCE and water and bring to a boil. Turn down heat to a medium to low simmer and cook till potatoes are cooked through. Serve over rice or grains of your choice. A side of bread is awesome too!

Tofu Vegetable Cashew Curry

  • 2 cups broccoli florets (or green bell pepper) diced
  • 1 cup diced carrots
  • 1 cup snow peas,cut in half
  • 1 lb firm tofu cut into 1" cubes
  • 1/2 cup water
  • 1 jar CK PARSI CASHEW GINGER SIMMER SAUCE

n a wok or a large saute pan heat the oil. Add the diced carrotsand broccoli florets and saute for a few minutes.  Add the jar of CK PARSI CASHEW GINGER SIMMER SAUCE and water. Let it come to a simmer. add the tofu and simmer fir 5 min. Add the snow peas and simmer for another 3 minutes. Turn off heat. to a medium to low simmer and cook till potatoes are cooked through. Serve over rice or grains of your choice.
